In reply to terra. It's definitely interesting to see. In Austin it depends on how much a food truck is growing, what areas they serve, and how much rent a brick-and-mortar spot costs. There are a handful of food trucks that seem to be staying that way because it's working out well for them, as I'm sure overhead is lower! As long as we get to eat their food, I'm good with it!

This whole food truck to brick and mortar thing has happened a few times with mixed success up here in Richmond, so it’s interesting to see how many places have done it in Austin. I feel like our food truck scene is still sort of new, but it’s definitely evolved in the past few years and it will be neat to see where it goes.

I haven’t been to OR heard of Garbo’s, but now I want a lobster roll! I think my favorite part about brick and mortars is honestly just having the a/c… haha.
