My mom gave me my love of pastries. When I was a kid, we regularly visited a French bakery on Saturdays and came home with a box of pastries. Sometimes, half of the box’s contents were already gone by the time we arrived home. I loved them all, but my favorites were croissants and palmiers, a heart-shaped pastry that was crunchy, caramelized, and sweet. As an adult, I discovered the kouign amann and it is a combination of my favorite pastries!
What is Kouign Amann?
First, you’re probably wondering how to pronounce the name: queen ah-mahn.
I love the crisp flakiness of the pastry, the buttery layers, and the sweet, caramelized crisp on the outside. Like puff pastry or a croissant, the kouign amann is light and fluffy with many layers. Kouign amann has layers of butter and sugar on the inside and caramelized sugar on the outside. The flavor is similar to a palmier, but it’s a little fluffier.
Where to Find Kouign Amann in Austin, TX
Kouign Amann isn’t as readily available as a variety of croissants, cinnamon rolls, and other pastries. No matter which restaurant or café you visit, be sure to go early because the kouign amann is bound to sell out!

Bakery Lorraine
