If you’ve been here for a while, you know I love dessert. Love like driving an hour to try a bakery’s cake. And eating a 21-course dessert dinner love. Recently, I’m also the one griping about how restaurants put desserts on their menu like an afterthought and memorable dessert is hard to find in Austin. (Don’t get me started…)
Enter the Paper Route Bakery cake flight.
This cake has me quite satisfied. I was wowed by a slice about a year ago and long talked about trying the flight.
You all can keep trying to impress me (please do), and I’ll stop by Paper Route Bakery for a quick slice to remind me that the best things are easy to find.
Paper Route Bakery
This bakery has evolved since its inception seven years ago. When Chef Aaron Seriff-Culick moved the operation to its current location in 2018, the bakery focused on a variety of baked goods, including scones, cookies, and pao de queijo (Brazilian cheese bread).
And then in 2021, the menu was simplified and intensified. Cakes all the time, and not just any regular cakes. Magic cakes. Cakes are made in an extensive process and make you slow down and consider them. It’s art, it’s quality, and it’s the best cake I’ve ever had. (And I eat a lot of cake.)
What makes the cake so good?
- Natural ingredients – Real ingredients, real flavors, real good.
- Chantilly cream – I love icing that is light and fluffy and this checks the box.
- Flavor depth – Read the description of each flavor and you’ll see the wild creativity and careful thought behind what makes these flavors unique.
- Flavor cohesion – Not only are the flavor combinations unique but it works with flying colors. You might see an ingredient you wouldn’t expect in the ingredient list, but how the flavor blends perfectly will surprise you.
- Perfect texture – Something you don’t typically call out when you taste something is texture, but the consistency and perfection here are noteworthy. It’s a moist cake that bounces and doesn’t dry out, with thick layers of ganache in the middle and that fluffy cream.
And all of this together brings the wow factor. Cake of my dreams is a high compliment, but let’s be honest. Like most of the best things in life, it’s better than I could have dreamed. I appreciate how delightful and creative Paper Route Bakery is, and I hope you try it soon!
